How to make potato soufflé:
Serve this as an impressive starter or a light main meal for you candlelit Valentine's celebration. Be aware that soufflés are not the easiest of dishes to cook, so practice before the event would be a good idea.



Ingredients

3 cups mashed potatoes
3 medium organic eggs
4 slices lean boiled ham
2 tablespoons grated cheese
2 tablespoons organic butter
salt and black pepper
2 tablespoons single cream
(see measure conversions for more information)

Method

- Pre-heat the oven to 180 degrees centigrade (see temperature conversions).
- Use a food processor or a sieve to make the potatoes extremely smooth.
- Separate the eggs.
- Beat the egg yolks, cream, ham, cream and cheese into the potatoes.
- Season to taste.
- Beat the egg whites until stiff and fold into the potato mixture.
- Spoon into a well-buttered soufflé dish or casserole and bake in the preheated oven for 30 to 35 minutes.
- Serve immediately.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
