How to make Yorkshire Parkin:
A lovely, spicy traditional recipe. Very much like a flapjack.

1 cup + 2 tablespoons wholemeal flour
1 1/2 cups medium oatmeal
1 teaspoon ground ginger
1/2 teaspoon cinnamon
pinch powdered mace
pinch grated nutmeg
3 tablespoons black treacle
1 teaspoon cream of tartar
1/2 teaspoon bicarbonate of soda
3 tablespoons brown sugar
1/2 cup butter or lard
3 tablespoons golden sugar
1 egg beaten
milk to mix just under 1/2 pint
(see measure conversions for more information)

- Put all the dry ingredients into a bowl and rub the butter or lard into it.
- Put the syrup and treacle and sugar into a saucepan.
- Warm to melt the sugar.
- Stir and mix into the dry ingredients.
- Mix in the egg and milk.
- Put the mixture into a well greased tin and cook in a low to moderate oven for about 1 hour. Remove from oven and allow to cool.
- Cut into fingers.
