How to make West Riding pudding:
A sponge cake mix with jam/jelly on the bottom in a pastry case.


shortcrust pastry
2 organic eggs
4 tablespoons organic flour
1/2 cup butter
4 tablespoons sugar
1/4 teaspoon baking powder
a little home-made jam/jelly
(see measure conversions for more information)


- Roll out the pastry and use it to line an ovenproof pie dish.
- Spread the pastry on the bottom with the jam.
- Cream the butter and the sugar together using a wooden spoon and add the eggs then add the flour a little at a time.
- Also add the baking powder.
- Pour this mixture into the pastry-lined pie dish and bake for 1 hour at 180 degrees centigrade (see temperature conversions).
