How to make Welsh pudding:
A pudding pie. A pastry case with a sponge pudding filling.


1 organic egg
shortcrust pastry
made from 1 cup flour, 4 tablespoons shortening

the weight of the egg in each of:
caster/superfine sugar
organic flour
1/4 teaspoon baking powder
1tbs home-made jam
a little grated organic lemon peel
(see measure conversions for more information)


- Line a shallow oven proof dish with the rolled out pastry.
- Spread the jam over the pastry on the bottom.
- Cream the butter and sugar together with a wooden spoon and beat in the egg and baking powder adding the flour a little at a time.
- Stir in the lemon rind.
- Pour this mixture over the jam and bake the pudding for 30 minutes at 190 degrees centigrade (see temperature conversions).
