How to make Welsh dripping cake:
A traditional cake from Wales which uses dripping (i.e. the fat left over from cooking a joint of beef) and would thus have been economical.


2 cups all purpose flour
1 level teaspoon cinnamon
8 tablespoons dripping
2 tablespoons butter
4 tablespoons brown sugar
1 egg
just under 1/2 cup currants
just under 1/2 cup sultanas
1 tablespoon mix peel
4 tablespoons milk
(see measure conversions for more information)


- Cream the butter, dripping and sugar together.
- Fold in the fruit and peel.
- Add the flour and milk to make a dropping consistency.
- Place into greased cake tin about 7".
- Bake in oven at 180 degrees centigrade (see temperature conversions) for about 1 - 1 1/4 hours or until cake is set and firm to touch.
