How to make Welsh cinnamon cake:
A traditional cake from Wales.


1 teaspoon cinnamon ground
4 tablespoons sugar
2 cups flour
1/2 cup butter
2 egg yolks
2-3 egg whites
1 tablespoons caster/superfine sugar for each egg white used
1/2 teaspoon baking powder
milk to mix
(see measure conversions for more information)


- Sieve the flour and baking powder into a large mixing bowl.
- Rub in the butter.
- Mix in the sugar, cinnamon, the egg yolks and a little milk to make a fairly stiff mixture.
- Spoon into a well greased ovenproof tin/dish which the cake can also be served in.
- Bake at 200 degrees C. (see temperature conversions) for 20 minutes.
- Whip the egg whites until stiff and then fold in 1 tablespoon of caster sugar for each white used.
- Spread the top of the cooled cake with jam of your choice (usually apricot or raspberry) and spread the meringue on top of this.
- Put the cake back into the oven at 170 degrees C. until the meringue on top is firm and light golden on the peaks.
