British Recipes > Threshing Day Pudding

How to make Threshing Day pudding:
This is somewhat similar to a Christmas pudding (during World War 2 carrot was sometimes used since sugar was rationed). Threshing Day pudding contains all the elements of an ancient celebratory pudding; spice, suet and fruit.

1 1/2 cups breadcrumbs
4 medium grated raw carrot
2 cups dates, stoned
2 cups sugar
3 cups flour
4 grated raw apples
1 cup grated lemon peel
1 teaspoon mixed spice
2 cups suet
2 cups currants
2 cups raisins
3 eggs
(see measure conversions for more information)

- Mix all the ingredients together using enough milk to bind.
- Boil in greased basins for 6 hours.
- Boil for 4 hours on the day they are to be eaten.
- Serve with white sauce.
