1 3/4 cups Demerara sugar
1 cup butter
4 tablespoons black treacle
1 teaspoon ground ginger
pinch of mace
pinch of salt
pinch of nutmeg
4 tablespoons candied peel
(see measure conversions for more information)
- Put all the dry ingredients in a bowl and pour the melted butter and treacle into the dry ingredients.
- Knead all the ingredients together.
- Roll out on a floured board to a thickness of about 2 inches.
- Bake on a large greased baking tin at about 150 degrees Centigrade (see temperature conversions).

A traditional Bonfire Night cake from the north of England. No doubt this recipe goes back much further than Guy Fawkes, probably to the Celtic festival of 'Samhain' which was celebrated in early November.Ingredients

I am an American resident of Mexico and on a recent trip discovered Cornish Pasties well established in the old mining town of Real del Monte, State of Hidalgo. Cornish miners worked there in the 19th. century and introduced not only pasties, but football, now Mexico's grand sports passion.
The pasties have spread too, and I often buy them in the bus station in Mexico City. After surviving for so long in Mexico it is difficult to find the original version as they have gradually acquired a true Mexican flavor, ie. lots of hot chili. You can find them made with mole, picadillo, frijoles, etc.
