How to make Sussex Lardy Johns:
A recipe for cakes from Sussex. Traditional cookery often makes use of lard in cakes as what was probably a cheaper and more easily stored alternative to butter.


4 tablespoons flour
a little baking powder
2 tablespoons currants
2 teaspoons sugar
4 tablespoons lard
(see measure conversions for more information)


- Rub all the ingredients together and make into stiff dough with a little water.
- Roll out thinly and cut into squares.
- Bake for 10 minutes in a hot oven 220oc/425of/gas mark 7 until golden brown.
