1 tablespoon caster/superfine sugar
2 tablespoons currants
4 tablespoons lard
1/2 cup milk soured with the juice half lemon
(see measure conversions for more information)
- Roll out on a board to 1 inch thickness.
- Cut into small rounds and brush over with a little soured milk.
- Place in moderate oven 160oc/325of/gas mark 3 for 15 minutes or until golden.

How to make Sussex Heavies:
A typical traditional scone type mix, in this case containing fruit, from the south of England.Ingredients
2 cups flour1 tablespoon caster/superfine sugar
2 tablespoons currants

Method
- Rub lard into flour, add sugar and currants and make into a stiff pastry with soured milk.- Roll out on a board to 1 inch thickness.
- Cut into small rounds and brush over with a little soured milk.
- Place in moderate oven 160oc/325of/gas mark 3 for 15 minutes or until golden.
