How to make Shrewsbury cakes:
A traditional regional cake to try.


1 cup butter
4 tablespoons cream
1 egg
8 tablespoons caster/superfine sugar
half lemon
2 cups flour
(see measure conversions for more information)


- Cream the butter and sugar together.
- Add the egg, then the flour, grated lemon rind and juice and, lastly the cream.
- Turn out on a board and knead well.
- Leave to stand for half an hour.
- Roll out thinly, cut into small rounds and place on a greased baking sheet.
- Bake in a moderate oven 160oc/325of/gas mark4 for about 10 minutes.
- Sometimes a little sherry, rose water, caraway seeds or nutmeg can be added with the flour.
