6 tablespoons caster/superfine sugar
3 cups + 2 tablespoons flour
2 tablespoons rice flour
1 teaspoon baking powder
(see measure conversions for more information)
- Sift the flour, baking powder and rice flour together and mix in with the sugar mixture.
- Knead well.
- Divide the mixture into 2 and roll out into rounds using a piece of greaseproof paper as a template.
- Decorate around the edges with thumb and finger pinches.
- Prick all over with a fork and then bake keeping the greaseproof paper in place on a greased baking tray at gas mark 3 for 40 minutes.
- Remove paper when shortbread is firm and cool.

Just as a matter of correct usage, Scotch is a drink and Scottish refers to something from Scotland, and Scots are the people therefrom - and it drives them mad to see anything but whiskey described as Scotch. You might want to change the name of this recipe accordingly.
