How to make Ripon cakes:
A bun recipe from Ripon in Yorkshire.


1 1/2oz butter
1 1/2oz ground almonds
1 1/2oz ground rice
a few drops almond extract
1 1/2oz sugar
2oz flour sifted with 1/4 teaspoon baking powder
1 egg
1/4 teaspoon baking powder
(see measure conversions for more information)


- Cream the butter and sugar together.
- Beat in the egg with a little of the flour and then fold in the rest of the flour.
- Fold in the almond extract, ground rice and ground almonds.
- Bake in well-greased bun tins for 15 - 20 minutes in a fairly hot oven (about 400 degrees F.)
