1/2 teaspoon baking powder
4oz butter, softened
4oz soft light brown sugar
1 teaspoon ground mixed spice
finely grated rind of 1 lemon
1/4 pint porter
2 eggs
12oz mixed dried fruit (see measure conversions for more information)
- Stir in the dried fruit.
- Pour into a well-greased cake tin.
- Bake at 325oF/170oC/gas mark 3 for about 1 1/2 hours.
- The cake should be well-risen and firm to the touch.
- Leave cake in the tin until cold.
- Traditionally this cake was kept in an airtight tin for one week before eating.

How to make Porter cake:
This recipe originated in Northern Ireland, where Porter was a popular drink.Ingredients
8oz self raising wholemeal flour1/2 teaspoon baking powder
4oz butter, softened
4oz soft light brown sugar

Method
- Put the flour, baking powder, butter sugar, spice, lemon rind, porter and eggs in a bowl and beat for 2 - 3 minutes.- Stir in the dried fruit.
- Pour into a well-greased cake tin.
- Bake at 325oF/170oC/gas mark 3 for about 1 1/2 hours.
- The cake should be well-risen and firm to the touch.
- Leave cake in the tin until cold.
- Traditionally this cake was kept in an airtight tin for one week before eating.
