4 tablespoons melted butter
6 large oysters, opened and clean
60ml sour cream
reserved oyster liquor
cayenne pepper
black pepper
lemon twists to serve
(see measure conversions for more information)
- Brush them inside and out with the butter.
- Crisp in the oven at 220 degrees C. (see temperature conversions) (about 6-10 minutes).
- Add the oyster juices to the rest of the melted butter.
- Bring to the boil and simmer for a few minutes so that the liquid reduces.
- Put the oysters into the mixture and allow to cook for two minutes.
- Stir in the sour cream.
- Do not allow mixture to boil again.
- Remove from the heat and season with cayenne and black pepper.
- Put the oysters into the hollow loaves and pour the sauce over.
