2 tablespoons flour
1 egg separated
1 tablespoon milk
seasoning
1 tablespoon oil
deep fat for frying
(see measure conversions for more information)
- Make the batter by mixing the egg yolk, oil and milk into the sieved flour.
- Beat until smooth and leave to stand for one hour.
- Whisk the egg white until stiff and fold into the batter.
- Dip the oysters into the batter and fry in very hot fat.
- Remove from the pan and serve hot with lemon wedges.

How to make oyster fritters:
In the early 20th century there was shop on Southend sea front which sold these fritters. The oysters were harvested locally.
Ingredients
oysters, opened and cleaned2 tablespoons flour
1 egg separated

- Blanch the oysters in their liquor and then drain them.- Make the batter by mixing the egg yolk, oil and milk into the sieved flour.
- Beat until smooth and leave to stand for one hour.
- Whisk the egg white until stiff and fold into the batter.
- Dip the oysters into the batter and fry in very hot fat.
- Remove from the pan and serve hot with lemon wedges.
