How to make Oxfordshire carrot pudding:
A steamed pudding which would have been served with a roast meal.


8 large carrots
1 egg
a little milk
2 tablespoons flour
a little butter
(see measure conversions for more information)


- Boil the carrots until soft, then mash.
- Melt the butter and brown the flour in it, add milk and seasoning, and mix well.
- Add egg yolk and carrots.
- Beat the egg white and fold into the mixture.
- Put in a greased pudding basin, cover and steam for 15 minutes.
- Turn out, pour a little melted butter over it and serve hot.
