3 tablespoons sugar
4 tablespoons currants
shortcrust pastry
2 tablespoons candied peel
6 tablespoons butter
a little ground ginger and cinnamon
a little milk
(see measure conversions for more information)
- Place a layer in a greased pie dish, then the chopped peel, spices and currants.
- Pour a little melted butter on top.
- Place another layer of apples and chopped peel over it.
- Boil 1/2 pint water, melt some sugar in it and pour over the apples.
- Cover with short crust pastry and bake for 30 minutes in a moderate oven 160oc/325of/gas mark 3.
- Glaze with a little sugar and milk.
