How to make Oast Cakes Kent:
A currant cake from Kent.


8 cups all purpose flour
1/2 cup lard
3/4 cup currants
pinch of salt
a little water to mix
2 tablespoons sugar
a little lemon juice
1 teaspoon baking powder
lard for frying
(see measure conversions for more information)


- Mix dry ingredients and rub in the lard.
- Add currants.
- Make light dough with a little water and add lemon juice.
- Shape the dough into small pieces and roll out on a board.
- Fry in lard until golden brown.
- Serve hot.
