How to make Northumberland Singin' Hinnies:
Singin' Hinnies get their name from the fact that they are so rich that they sing and sizzle while they cook.


4 cups flour
1/4 teaspoon bicarbonate of soda
8 tablespoons lard
a little milk
1/2 teaspoon cream of tartar
6 tablespoons currants
8 tablespoons butter
(see measure conversions for more information)


- Rub the lard and butter into the flour.
- Add the cream of tartar and bicarbonate of soda.
- Add the currants.
- Make into stiff dough with the milk.
- Shape into a round and roll out to 1/2 in thickness.
- Rub the girdle with a little fat.
- Place cake on it and cook until the underside is brown.
- Turn carefully with a palette knife.
- Turn again when cooked, to have it quite hot.
- Cut into pieces, spilt butter and serve hot.
