How to make Northumberland Felton Spice Loaf:
A spicy traditional loaf that does not contain yeast.


8 tablespoons butter
2 eggs
2 tablespoons ground almonds
1 cup plain flour
1 cup self raising flour
a little milk
4 tablespoons sugar
8 tablespoons currants
2 tablespoons shredded peel
(see measure conversions for more information)


- Sieve almonds and flour.
- Mix peel and currants in a separate basin.
- Cream butter and sugar, and add eggs, beating all the time.
- Add flour and milk, and then mix in the fruit.
- Turn into a well greased tin and spread level.
- Bake in a fairly hot oven 190oc/375of/gas mark5 for about 30 mins, turning the heat down half-way through.
