1 cup + 1 tablespoon plain flour
1/2 cup caster/superfine sugar
2 tablespoons chopped, blanched almonds
1 teaspoon rosewater
(see measure conversions for more information)
- Fold in the flour with a metal spoon and add the rosewater and almonds.
- This mixture should form a stiff dough.
- Spoon in small mounds onto a greased baking tray and bake for about 15 minutes at 180 degrees Centigrade (see temperature conversions).
- When baked the biscuits should be golden brown in colour.

How to make Maidstone biscuits:
Biscuits from what is probably an ancient traditional recipe. The biscuits contain two hallmarks of rich, festive cuisine; almonds and rosewater.
Ingredients
1/2 cup butter1 cup + 1 tablespoon plain flour
1/2 cup caster/superfine sugar
2 tablespoons chopped, blanched almonds

Method
- Put the sugar and butter into a large bowl and cream, using a wooden spoon, until light in colour and fluffy in texture.- Fold in the flour with a metal spoon and add the rosewater and almonds.
- This mixture should form a stiff dough.
- Spoon in small mounds onto a greased baking tray and bake for about 15 minutes at 180 degrees Centigrade (see temperature conversions).
- When baked the biscuits should be golden brown in colour.
