2 teaspoons baking powder
pinch of salt
3 tablespoons butter
2 level tablespoons superfine sugar
4 cooking apples (peeled, cored and diced) cooked with sugar as necessary
1 egg, beaten
milk to mix (may vary according to amount of juice in apples)
1 tablespoon icing/confectioners sugar for dusting
(see measure conversions for more information)
- Rub in the butter and then stir in the superfine sugar.
- Stir in the cooking apples, egg and enough milk to make a fairly stiff consistency.
- Add the milk tablespoon by tablespoon.
- Spoon the mixture into a well-greased 7-inch tin and bake at 200 degrees Centigrade (see temperature conversions) for 45 minutes or until golden brown.
- The cake will not rise very much because of the weight of the apples.
- Turn out and cool.
- Sprinkle with confectioners sugar.
- Serve with custard, cream or ice cream.
