- Whip the egg white and fold into the mixture.
- Bake on greased paper in a moderate oven 150od/c325of/gas mark5 for 30 - 40 minutes, but keep pale in color.

How to make Grantham gingerbread (white):
These gingerbreads from Grantham (Margaret Thatcher's birthplace) are said to be white because they do not contain black treacle (molasses) and thus do not take on the traditional gingerbread color.
Ingredients
2 cups flour4 tablespoons sugar
1 tablespoon ground ginger

Method
- Cream butter and sugar, beat in egg yolk, and add flour, baking powder and ginger.- Whip the egg white and fold into the mixture.
- Bake on greased paper in a moderate oven 150od/c325of/gas mark5 for 30 - 40 minutes, but keep pale in color.
