Grantham Gingerbread Recipe

These gingerbreads from Grantham (Margaret Thatcher's birthplace) are said to be white because they do not contain black treacle (molasses) and thus do not take on the traditional gingerbread colour.


  • 2 cups flour
  • 4 tablespoons sugar
  • 1 tablespoon ground ginger
  • a little baking powder
  • 8 tablespoons butter
  • 1 egg
(see measure conversions for more information on quantites)


  1. Cream butter and sugar, beat in egg yolk, and add flour, baking powder and ginger.
  2. Whip the egg white and fold into the mixture.
  3. Bake on greased paper in a moderate oven 150od/c325of/gas mark5 for 30 - 40 minutes, but keep pale in colour.

Prep Time: 15 minutes

Cook Time: 40 minutes

Yield: 1 gingerbread


Every time I try to make these thet are not coming ot hollow. Any reason?
