shortcrust pastry
grated lemon peel
2 tablespoons sugar
for Spiced Ale:
1 pint ale
1 tablespoon sugar
1 clove nutmeg
cinnamon to taste
(see measure conversions for more information)
- Heat the ale gently with the spices and sugar.
for pie:
- Wash and core the apples.
- Put the apples into a deep pie dish and sprinkle the sugar and lemon peel over them.
- Roll out the pastry to about 1/4 inch thickness and cover the apples with it.
- Bake in a moderate oven for 30 minutes.
- Lift off the pastry lid and cut it into as many pieces as are required for servings.
- Pour the spiced ale over the apples and replace the pieces of pastry.
- Serve hot.
