- Place bowl over a saucepan of simmering water.
- Whisk.
- The mixture will thicken.
- When the zabaglione begins to leave the sides of the bowl, it is ready.

How to make zabaglione:
A very well known Italian dessert. N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).

8 tablespoons Marsala4 egg yolks
4 tablespoons sugar

Method
- Put all the ingredients, except the Amaretti biscuits, into a heat-proof basin.- Place bowl over a saucepan of simmering water.
- Whisk.
- The mixture will thicken.
- When the zabaglione begins to leave the sides of the bowl, it is ready.
- Serve in attractive glass dishes with the Amaretti biscuits.
