How to make yogurt cake:
A light cake with the tang of lemon, peel and yogurt.


4oz butter
6oz caster/superfine sugar
grated rind of lemon
3 eggs separated
6oz self raising flour
6 floz natural yogurt
2oz chopped mixed peel
(see measure conversions for more information)


- Cream the butter and sugar together.
- Add the lemon rind.
- Beat well.
- Add the egg yolks one at a time and beat.
- Add the sifted flour alternately with the yogurt.
- Stir in the mixed peel.
- Whisk egg whites until stiff.
- Fold into the mixture.
- Bake in a well-greased 2lb loaf tin at 180 degrees C. for 1 hour.
