1 tablespoons live natural yogurt (containing Lacto Bacillus Bulgaricus)
(see measure conversions for more information)
- Allow to cool until it is between 100-125 degrees Fahrenheit (see temperature conversions) (use a cooking thermometer).
- Skim off any skin which may have risen to the top of the milk and then whisk the live yogurt into the milk.
- Put the mixture into a large thermos flask, screw the lid on and leave for up to 7 hours.
- Some whey will settle at the top of the yogurt.
- Pour this off and store the yogurt in a bowl in the fridge.
- More batches of yogurt can be made from this but it is best to do it within a few days.

Any flavouring could be added at the end of the process or stirred in just before eating.
