How to make yeast cake:
A fruity yeast cake to try.


3 tablespoons butter
3 tablespoons lard
3oz sugar
1 teaspoon golden syrup
1 egg
pinch of salt
1/2oz yeast
3/4 teacupful milk
1/2lb dried fruit
1/2lb plain/all purpose flour
1 level teaspoon mixed spice
1/2 level teaspoon bicarbonate of soda

- Cream the butter with the sugar.
- Add the syrup and beat in the egg.
- Warm the milk and pour half over the yeast and mix until smooth.
- Add the milk and yeast mixture to the creamed mixture.
- Sieve the flour with the spice, mix with the fruit and add to the mixture.
- Mix the bicarbonate with the rest of the milk and add to the mixture.
- Spoon into a well-greased cake tin.
- Bake at 200 degrees Centigrade for 1 hour or until the cake is firm to the touch.
- Cool in the tin and then put onto a wire rack.
