1lb cauliflower, peeled, diced and cooked
1lb swede, peeled, diced and cooked
1lb carrots, peeled, diced and cooked
reserve 3/4 pint of vegetable cooking water
1oz rolled oats
stock cube
3-4 spring onions, chopped
potato pastry
cheese for topping
(see measure conversions for more information)
- Add the oats and stock cube.
- Cook until thickened.
- Place all the vegetables on a large pie dish.
- Add the spring onions.
- Pour on the cooking water, stock cube and oats mix.
- Cover the pie with potato pastry and cheese and cook in a moderate oven until warmed through and golden brown on top.

How to make Woolton pie:
Much has been made recently of the rise in the cost of food, so we thought we would include the most famous of all English wartime austerity dishes, the Woolton Pie. It was named after the then Minister of Food, Lord Woolton. It is a simple pie to make and still represents a cheap and nutritious meal.Ingredients
1lb parsnips, peeled, diced and cooked1lb cauliflower, peeled, diced and cooked
1lb swede, peeled, diced and cooked
1lb carrots, peeled, diced and cooked

- Cook until thickened.

As an alternative to potato pastry, you can also make a wholemeal pastry with 4 oz wholemeal flour and 2 oz (56.7g) lard or butter rubbed in (WW2 recipe!).
