How to make wholemeal dripping cake:
This cake harks back to a time when all fats were valuable to the cook and dripping was saved and used in recipes. In Victorian times it was quite common practice for cooks to sell left-over fats to make a bit of pocket money.


8oz mixed dried fruit
3oz beef dripping
5oz soft brown sugar
7 1/2 floz water
8oz wholemeal flour
1 teaspoon baking powder
pinch of ground nutmeg
pinch of ground cinnamon
pinch of ground mixed spice
1/2 teaspoon bicarbonate of soda

- Put the fruit into a saucepan with dripping, sugar and water.
- Bring to the boil and simmer for 10 minutes, stirring all the time.
- Leave to cool.
- Sieve together the flour, baking powder, spices and soda.
- Stir into the fruit mixture.
- Mix well.
- Put into a greased 7 inch round cake tin.
- Bake at 180 degrees C. for 1 1/2 hours.
- Cool on wire rack.
