How to make Whole Mackerel with Watercress Sauce:
This rich meaty fish makes a substantial meal. Serve with game chips and a crisp salad and watercress sauce.


Whole Mackerel with Watercress Sauce
4 mackerel, heads, tails and guts removed
lemon juice
(see measure conversions for more information)


- Place each mackerel on a piece of baking parchment.
- Squeeze a little lemon juice over each fish.
- Salt and pepper each fish.
- Wrap loosely in the baking parchment.
- Bake at 200 degrees C. for about 20 minutes depending on the size of the fish.
