How to make Watercress Sauce:
A delicately flavoured, smooth and attractive sauce which goes well with most fish, such as whole mackerel.


Whole Mackerel with Watercress Sauce
6oz watercress, washed, trimmed and chopped
2oz butter
1 small onion, peeled and sliced
1 clove garlic, skinned and crushed
4 tablespoons dry white wine
2 tablespoons stock
1 level teaspoon sugar
(see measure conversions for more information)


- Melt the butter in a saucepan.
- Soften the garlic and the onion in the butter.
- Add the watercress, wine, stock and sugar.
- Cook for about 3 minutes.
- Blend in a blender until smooth.
- Heat gently and serve with fish.
