1lb potatoes, peeled and cut up
1 onion, peeled and chopped
salt and pepper to season
1/2 pint milk
a little chopped parsley
a little fat
(see measure conversions for more information)
- Add the potatoes.
- Add the water.
- Season with salt and pepper to taste.
- Bring to the boil.
- Simmer for 2 hours.
- Remove from heat.
- Allow to cool.
- Rub through a sieve (or use a blender).
- Return to the saucepan.
- Add the milk and reheat.
- Serve with a little chopped parsley.

How to make Wartime Potato Soup:
This has to be the most economical soup ever, especially if you grow your own potatoes and onions. This soup is thick and filling and not at all what you would expect from austerity measures.Ingredients
