6 tablespoons butter
3 tablespoons sugar (superfine or soft brown)
3/4 cup mixed dried fruit
1 tablespoon vinegar
milk as required
(see measure conversions for more information)
- Rub the butter into the flour.
- Stir in the sugar and dried fruit.
- Add the vinegar and several tablespoons of milk.
- Mix adding more milk as necessary to give a dropping consistency.
- Pour the mixture into a greased and floured loaf tin.
- Bake in oven at 150 degrees centigrade (see temperature conversions) for about an hour or until done.

Vinegar loaf is an example of using vinegar as a raising agent instead of eggs. Very economical in times when eggs were expensive. Best of all you can't taste the vinegar!Ingredients
