How to make vegetable hot pot:
This is a very useful recipe to bear in mind when catering for vegetarians. The vegetables can be varied/changed as required.


1/4 cup flour
2 carrots, peeled and roughly chopped
3 onions, peeled and roughly chopped
1/4 of a medium rutabaga, peeled and roughly chopped
2 stalks celery, diced
4 tomatoes, skinned and chopped
1 x  1/2 lb can baked beans
1 teaspoon vegetable extract
2 1/2 cups bouillon
3 large potatoes, peeled and sliced
chopped parsley to garnish

- Season the flour with salt and pepper.
- Use this to coat the chopped vegetables.
- Place the vegetables in a large casserole.
- Add the tomatoes and baked beans.
- Dissolve the vegetable extract in the bouillon and pour over the vegetables.
- Cover the top closely with overlapping slices of potato.
- Bake in oven at 180 degrees centigrade (see temperature conversions) for 1 to 1 1/2 hours or until vegetables are cooked.
- Serve sprinkled with chopped parsley.
