How to make vegetable gumbo:
A great vegetarian dish with the kick of Tabasco sauce.


4 tablespoons olive oil
1 tablespoon flour
1 large onion, peeled and chopped
1 green pepper, deseeded and sliced
8oz okra, trimmed and sliced
5 tomatoes, skinned and chopped
4 celery sticks, washed and chopped
1/2 pint vegetable stock
Tabasco sauce
salt and black pepper

- Fry the onions in the olive oil until transparent.
- Add the other vegetables and fry briskly for 3 minutes.
- Stir in the flour and cook for about 1 minute.
- Add the stock and the tomatoes and bring to the boil, stirring frequently.
- Reduce the heat.
- Season and add Tabasco to taste.
- Simmer for about 10 - 15 minutes or until the vegetables are tender and the sauce has reduced and thickened.
- Serve with rice.
