2 organic, free range egg yolks
3 tablespoons caster/superfine sugar
1 pint organic milk
1 vanilla pod
1/4 pint organic, single cream
(see measure conversions for more information)
- Add the sugar and whisk to mix.
- Split the vanilla pod and add it to milk in a saucepan.
- Bring the milk almost to the boil, remove the vanilla pod and pour milk onto the egg mixture, stirring well.
- Strain this custard and leave to become quite cold.
- Stir in the cream.
- Freeze, preferably using an ice cream maker.
- If you do not have an ice-cream maker, freeze the mixture in a rigid plastic container.
- Remove from freezer during freezing process and beat to break up ice crystals.
- You may need to do this a number of times.

Sorry and thanks for pointing that out! The cream goes into the custard mixture when it has cooled down.
