3 tablespoons sugar
1 tablespoon flour
1 egg yolk
2 tablespoons butter
1 vanilla pod
double or clotted cream
shortcrust pastry
(see measure conversions for more information)
- Heat three quarters of the milk to boiling point with the split vanilla pod in it.
- Set aside off the heat to infuse.
- Mix the flour and sugar to a smooth paste with the rest of the milk.
- Strain the hot milk and remove the vanilla pod.
- Pour the milk over the flour, sugar and milk.
- Stir well.
- Bring to the boil and then simmer, stirring until thickened.
- Put the egg yolk into a basin and slowly add the hot milk mix to it.
- Stir well.
- Cook gently for one minute.
- Add the butter.
- When cold, pour into the baked flan case and cover with whipped double cream or clotted cream.

How to make vanilla cream pie:
This is basically a custard tart made extra rich by the addition of a cream topping when the pie is cold. If preferred you could put a layer of soft or stewed fruit over the custard filling and then serve with cream.
Ingredients
