1lb Victoria plums, stoned and cut into quarters
3oz caster/superfine sugar
2 1/2 oz plain/all purpose flour
1/4 teaspoon ground cinnamon
1oz butter, melted
(see measure conversions for more information)
- Melt the jam with 1 tablespoon of hot water.
- Pour the melted jam evenly over the base of the tin.
- Arrange the plum quarters in rows on top.
- Whisk the eggs with the sugar until pale and very thick.
- Gradually fold in the flour and cinnamon.
- Fold in the melted butter.
- Pour this mixture over the top of the plums.
- Bake for 25 – 30 mins at 180 degrees C.
