2 1/4 cups icing/confectioners sugar
6 tablespoons desiccated coconut
a few drops natural food coloring
(see measure conversions for more information)
- When the mixture becomes stiff divide into two parts.
- Color one half of the mixture with a few drops of natural food coloring.
- Shape the mixture into two identical bars and press firmly together.
- Dust a tin or plate with icing sugar and leave the coconut ice on this until firm.

I have never tried freezing it. Does anyone else know if this is possible? I usually wrap mine in greaseproof paper and leave in the fridge. Trouble is it get eaten in a few days!
