5 tablespoons (2 1/2oz) butter
1 cup (4oz) button mushrooms, wiped and sliced
1 1/2 tablespoons (1 1/2oz) plain/all purpose flour
1 pint turkey stock
1/4 pint milk
3/4lb cooked turkey, cut into bite sized pieces
2 egg yolks beaten with 2 tablespoons single cream and 1 tablespoon dry sherry
salt and pepper
(see measure conversions for more information)
- Sprinkle the flour over the peppers and mushrooms, stirring well.
- Gradually stir in the stock and milk.
- Allow to boil, stirring all the time and cook gently until the mixture thickens.
- Lower the heat.
- Add the turkey.
- Heat through thoroughly and gently.
- Add the egg, cream and sherry mixture.
- cook very gently for a few more minutes.
- Season.
- Serve with rice or noodles.

Well known '70s turkey dish.
Ingredients
