Main Meal Recipes > Trout with Almonds

How to make trout with almonds:
This dish probably originated in Italy but has been adopted and adapted by other countries as a slightly more tasty way of serving trout, a fish that can sometimes be a little bland.

4 whole trout
1/4 pint milk
2 tablespoons wholemeal flour
freshly ground black pepper
2 tablespoons butter
2 tablespoons sliced almonds toasted
(see measure conversions for more information)

- Rinse trout in cold water and pat dry with a clean cloth.
- Dip the trout in milk and then in flour.
- Melt butter in a heavy based frying pan.
- Fry trout for 8 minutes on each side over moderate heat until golden brown (with lid on pan).
- Sprinkle almonds over the trout and garnish with parsley and lemon.
- Remove from heat and serve.
