How to make treacle toffee 2:
A slightly more complicated toffee recipe. The molasses (black treacle) lends a deeper and more intense flavor as well as giving the toffee a darker flavor. See Cooking with Sugar for information on the tricky process of boiling sugar.


12 tablespoons Demerara sugar
1/2 cup butter
pinch of cream of tartar
8 tablespoons black treacle
just under 1/2 pint of cold water
(see measure conversions for more information)


- Dissolve the sugar and butter and treacle in the water and bring to the boil.
- Add the cream of tartar and raise the temperature to 280 degrees Fahrenheit (see temperature conversions) (hard ball).
- Use to make toffee apples or just allow to set and break into pieces.
