2 tablespoons cashew nuts
1lb prawns
8 spring onions, trimmed and cut into strips
2 cloves garlic, peeled and finely chopped
5 pak choi leaves, washed and sliced
4 teaspoons tamarind paste
2 teaspoons fish sauce
2 teaspoon caster/superfine sugar
juice 2 limes
(see measure conversions for more information)
- Remove the nuts from the pan and leave to one side.
- Put the prawns in the pan and cook for about 5 minutes.
- Stir in the pak choi and cook for another 2 minutes.
- Add the lime juice, tamarind paste, fish sauce and sugar.
- Stir well.
- Add the cashew nuts.
- Remove from the heat and serve.

How to make Thai prawn stir-fry:
An Asian-style flavoursome quick meal.
Ingredients

Method
- Fry the cashew nuts in the oil until lightly browned.- Remove the nuts from the pan and leave to one side.
- Put the prawns in the pan and cook for about 5 minutes.
- Stir in the pak choi and cook for another 2 minutes.
- Add the lime juice, tamarind paste, fish sauce and sugar.
- Stir well.
- Add the cashew nuts.
- Remove from the heat and serve.
