How to make teatime muffins:
These muffins are really more of a sponge mixture similar to the many flavored muffins now available in the shops.


3 tablespoons butter
2 cups flour
1/2 cup sugar
1 egg well beaten
2 teaspoons cream of tartar
1 cup milk
1 teaspoon bicarbonate of soda
(see measure conversions for more information)


- Cream the butter until smooth.
- Add the sugar and egg.
- Mix well.
- Add the milk.
- Fold in the flour and the other dry ingredients.
- Mix well.
- Put into well greased gem pans and bake in a moderate oven for 20-25 minutes.
