1/2 pint milk
1/2 cake compressed yeast (1/2 oz fresh yeast) or 1/2 tablespoon dried yeast
pinch of salt
1 teaspoon sugar (if using dried yeast)
8 cups (2lb) strong plain flour
(see measure conversions for more information)
- Leave in a warm place for 10 minutes until frothy, then mix it into the flour and knead until the dough is pliable and no longer sticky.
- Cover and leave to rise until doubled in size and springy to the touch.
- Knead again, shape into rolls and place them on a greased baking sheet.
- Cover and leave to prove for about an hour.
- Bake in a preheated oven at 230oC/450oF/gas mark 8 for about 20 minutes.
