How to make tarragon chicken with potato:
A hearty dish that uses the unique flavour of tarragon to enhance the chicken and potatoes.


2lb potatoes, peeled and thinly sliced
6 chicken breast fillets
2 tablespoons flour, seasoned with salt and pepper
4 tablespoons butter
1 teaspoon chopped fresh French tarragon
7 fluid oz double cream
1 clove garlic, skinned and finely chopped

- Cook the potatoes for 2 - 3 minutes in boiling water, remove from heat and drain.
- Roll the chicken in the seasoned flour.
- Lightly brown the chicken in the butter in a frying pan.
- Remove the chicken.
- Add the tarragon to the butter in the frying pan.
- Season the cream with salt and pepper and stir in the garlic.
- Layer the potatoes, chicken and cream in an ovenproof casserole, finishing with a layer of potatoes.
- Brush the top layer with the tarragon butter using it all up.
- Cook uncovered at 170 degrees C. for about 1 hour 15 minutes.
