N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).
1 tablespoon sweet sherry
1/4 pint cream
1/4 pint milk
3 egg whites, beaten to stiff peaks
sugar to sweeten if desired
(see measure conversions for more information)
- Taste and add sugar if necessary.
- Pour in the cream and milk.
- Whisk until frothy.
- Add the egg whites and whisk lightly.
- Chill.

How to make syllabub:
An unlikely mixture of acid and dairy products which can easily curdle and separate. This is an ancient dessert and tradition has it that it was originally made by milking a cow straight into a bowl of wine. See also Christmas Syllabub.N.B. Ingredients
1/4 pint lemon juice1 tablespoon sweet sherry
1/4 pint cream
1/4 pint milk

- Put the lemon juice and sherry into a large bowl or jug.- Taste and add sugar if necessary.
- Pour in the cream and milk.
- Whisk until frothy.
- Add the egg whites and whisk lightly.
- Chill.
