How to make sweetcorn pie:
Any favourite vegetable or mixture of vegetables can be used in this dish.


about 1lb fresh sweetcorn removed from the cob or the same weight of tinned or frozen sweetcorn
2 eggs
4 heaped tablespoons grated cheese
4 tablespoons butter
salt and pepper
1/2 pint milk
finely chopped parsley
(see measure conversions for more information)


- Cook fresh or frozen sweetcorn until tender.
- Add the milk and season to taste.
- Break the eggs into a bowl and beat well.
- Bring the sweetcorn and milk to the boil and pour onto the eggs whisking all the time.
- Mix in the butter and cheese.
- Put into a well-greased oven proof dish and cook for about 1 hour at about 170 degrees Centigrade (see temperature conversions).
- The pie should be golden brown.
